Dark Chocolate Collagen Pudding

Start to Finish: 3 hours
Ingredients:
- 1 cup coconut cream (additive-free)
- 30 grams quality dark chocolate
- 2 Tbsp. Bulletproof Collagen Peptides powder
- 1/2 tsp. Bulletproof Collagelatin mixed into 1-1.5 tsp. water
- Optional add-ins: zest of 1 orange, vanilla and additional sweetener to taste
Instructions:
- Mix 1/2 teaspoon gelatin powder and 1 to 1.5 teaspoons water in a small bowl. Allow to bloom and thicken.
- Add the bloomed Collagelatin, coconut cream and chocolate into a small saucepan. Melt over low-medium heat until completely melted and combined. If you want to add any additional flavor ingredients, mix them in here.
- Remove from the heat and mix through the collagen powder.
- Pour through a fine mesh strainer to remove any lumps and catch the pudding mix in a bowl.
- Place it into the fridge to set, about three hours.
- Once set, mix with a spatula to break down and smooth out any lumps. It should be a beautiful pudding consistency.
- Serve with grated chocolate and orange zest on top. Enjoy!
