Dark Chocolate Collagen Pudding

  1. Mix 1/2 teaspoon gelatin powder and 1 to 1.5 teaspoons water in a small bowl. Allow to bloom and thicken.
  2. Add the bloomed Collagelatin, coconut cream and chocolate into a small saucepan. Melt over low-medium heat until completely melted and combined. If you want to add any additional flavor ingredients, mix them in here.
  3. Remove from the heat and mix through the collagen powder.
  4. Pour through a fine mesh strainer to remove any lumps and catch the pudding mix in a bowl.
  5. Place it into the fridge to set, about three hours.
  6. Once set, mix with a spatula to break down and smooth out any lumps. It should be a beautiful pudding consistency.
  7. Serve with grated chocolate and orange zest on top. Enjoy!
