No-Bake Pumpkin Spice Bliss Balls

Start to Finish: 1 hour 15 minutes

Ingredients:

  • 1 cup cashews
  • ½ cup toasted dried coconut
  • 2-2.5 Tbsp. powdered sweetener of choice
  • 1 tsp. pumpkin pie spice
  • ½ tsp. powdered ginger (optional)
  • A pinch of salt
  • 2 Tbsp. Bulletproof Brain Octane C8 MCT Oil

Coconut coating

  • 1-2 Tbsp. toasted dried coconut
  • 1 tsp. powdered sweetener of choice
  • A pinch of pumpkin pie spice

Instructions:

  1. Add the coating ingredients into your food processor and blend into a fine, textured flour. Pour the mixture onto a small plate.
  2. Now add the cashews, toasted dried coconut, sweetener, pumpkin pie spice, extra ginger (if adding it in) and salt into a food processor and blitz into a flour.
  3. Add the Brain Octane C8 MCT Oil into the flour mixture and blend until combined. Scrape down the sides and re-blend. The mixture should start to come together. If the mixture isn’t coming together, keep blending until it does (but try not to overblend it into a nut butter). The mixture should be able to be rolled easily into a ball in your hands.
  4. Roll the mixture into even balls (we made eight), and then roll them all into the coating crumb.
  5. Pop into the fridge for an hour before serving.
