Collagen Breakfast Cookies

Ingredients
- 2 eggs
- ½ cup almond flour
- ½ cup shredded coconut
- ½ cup sliced almonds
- ½ cup pecans
- ½ cup pumpkin seeds
- ½ cup sugar-free chocolate chips
- 1/3 cup roasted almond butter
- 1/3 cup granulated monk fruit-erythritol blend
- 2 tbsp ground flax meal
- 2½ tbsp Bulletproof Vanilla Collagen Protein
- 2-3 tsp cinnamon
- 2-3 tsp ginger powder
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F.
- Line two baking trays with parchment paper.
- Mix all cookie ingredients together in a bowl.
- Oil hands with some coconut oil and roll the mixture into balls. Place them on the lined baking trays and press them into flat, even cookies.
- Place the tray in the oven and bake for approximately 20-25 minutes, or until golden and cooked through.
- Remove cookies from oven and allow time to cool.
- Serve with a hot cup of Bulletproof Coffee for a keto-friendly breakfast!
