Paleo Cauliflower Fritters

Craving hash browns? These cauliflower fritters make the perfect paleo-friendly alternative. They’re great for dipping in homemade guacamole or aioli, or serving with eggs and a heaping scoop of greens. Plus, they’re an amazing way to get kids (and grownups) to eat their veggies.

Cauliflower fritters combine one of my favorite cruciferous vegetables with anti-inflammatory spices like cumin, ginger, and turmeric. After steaming the cauliflower, these little fritters come together with heat-stable collagen peptides and coconut flour. Then, they’re pan fried in ghee until they get a crisp, golden crust.
I like my cauliflower fritters dressed with extra virgin olive oil, arugula, and an over-easy egg. However, you can also serve them with dishes like poached butter shrimp, fish curry, or jerk marinated pork chops.
Paleo Cauliflower Fritters

Start to Finish: 30 minutes
Ingredients:
- 1 large cauliflower head, broken into florets
- 1/3 cup Collagen Peptides
- 1/3 cup coconut flour
- 2 pasture-raised eggs
- 1 teaspoon baking soda
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1 tablespoon Grass-Fed Ghee
- Fresh cilantro to garnish
- Salt to taste
Instructions:
- In a steamer basket with 1 inch of boiling water, steam cauliflower florets until tender. Then, allow to cool on a plate while preparing the other ingredients.
- In a blender, add cauliflower and pulse until it forms a rice-like texture. Pour into a clean kitchen towel and gently squeeze out some of the excess water.
- Transfer cauliflower to a mixing bowl and then add remaining ingredients except cilantro. Mix well until combined.
- In a skillet on medium heat, add ghee and allow it to melt around the pan.
- Using your hands, shape cauliflower mixture into 6 fritters. Add fritters to pan and cook for 4-5 minutes. Carefully flip and cook for an additional 4-5 minutes.
- Serve cauliflower fritters warm with salt and cilantro to taste.
