Bacon Mashed Cauliflower Recipe
Loaded mashed potatoes are a classic, whether you’re devouring a grass-fed steak or enjoying a holiday meal. Spuds just seem to go with everything.
What they don’t go with is a low-carb diet. One medium russet potato has a whopping 34.8 grams of carbohydrates with only 2.4 grams of fiber. Calculate how many go into a dish of mashed potatoes, and you’ll start to wonder if it really is the turkey at Thanksgiving that puts you in a food coma.
Thankfully, there’s an alternative to mashed potatoes. With extra flavor from smoky bacon, this Bacon Mashed Cauliflower recipe will either fool your family into thinking it’s real mashed potatoes, or they won’t care that it’s not the real thing because it’s so much better!
