Unfortunately, most ice pops are sugar bombs in disguise, and even the popsicles that claim to use real fruit have added sugar.
These low-carb blueberry popsicles are exploding with flavor and quality fats, all without adding sugar! They’re made with pastured collagen, organic blueberries, fresh mint and organic, full-fat coconut milk. Minty Vanilla Blueberry Popsicles

Start to Finish: 8 hours (5 minutes active)
Ingredients:
- 1 cup fresh, organic blueberries
- 1/4 cup fresh mint leaves (whole or chopped fine)
- 1 can organic coconut milk (BPA-free)
- 2 scoops Bulletproof Collagen Protein
- 2 Tbsp. Brain Octane MCT oil
Instructions:
- In a blender, mix coconut milk, Brain Octane MCT oil and blueberries on high for 30 seconds.
- Add collagen and blend on low for 5 seconds, or until incorporated.
- Add mint leaves and a few blueberries to the popsicle molds.
- Fill each mold up to the top with the coconut milk mixture and place the popsicle sticks into the molds.
- Freeze for 8 hours, or until firm.
